Living up to eggs-pectations

*Disclaimer: this might be my cheesiest post yet. Hope you’re eggs-ited ;)*

Between a tea-smoked trout burger, teriyaki salmon & sticky rice, mushroom & goat cheese risotto, and birthday cake #5, my taste buds have clearly been spoilt this weekend!  Despite all this, the food that stands out most is also the simplest: an egg sunny side-up. I love eggs but if memory serves right, this weekend marked my first time trying eggs this style and I am hooked! One egg+salt+black pepper=perfection. Ooey and gooey, this is simplicity at its finest!

Speaking of eggs, they seem to be the biggest yolk joke in town. It’s a hard-knock life for an egg: it gets cracked, scrambled, whipped and accused that its yellow middle raises the body’s cholesterol levels and the risk of heart disease. Well it looks like the yolk’s on us: although I’m no eggs-pert, so many recent studies reveal the contrary:

“‘While it’s true eggs are high in cholesterol (an average egg contains 212 mg), only a small amount of the cholesterol from food actually passes into the blood. The real villains are saturated fats and trans fats as they have a much bigger impact on blood cholesterol levels.”

Now that we’ve covered this ongoing piece of BS, let’s get to the fun bit. If taste alone isn’t enough to convince you, here are some other eggs-amples why eggs are a staple in my casa:

  1. Eggs-cellent form of protein: As each egg weighs in at 6g of protein, it can easily curb our appetite & keep us fuller for longer.
  2. Muscle growth & repair: eggs contain all 8 essential amino acids and are thus a high-quality, complete protein. They count as eggs-eptional post-/pre- workout snacks.
  3. Help in the baby-makin’ department: Okay, this is clearly not on my agenda now but when I’m ready to contribute to the world’s population, it’s good to know that the choline found in yolks promotes healthy pregnancies by encouraging normal brain development of the fetus.
  4. Eggs-treme amounts of natural goodness like selenium, vitamin B12 & vitamin D. Yep, eggs are actually one of the rare natural foods which contain vitamin D. Most foods sold with vitamin D have it added artificially.  Eggs- 1, days without sunlight- 0 😆
  5. Versatility: sweet or savory, eggs can play the part. Whether it’s for breakfast,lunch or dinner, there are so many options to eggs-periment with!
  6. Budget-friendly: even though I’m all for ‘investing in your health’, I won’t deny that ‘health’ foods can work out pretty expensive. Despite its nutritional profile, eggs are an economical source and can be bought just about anywhere.

 

**Sunny side up eggs are not recommended for pregnant ladies as the yolk isn’t cooked thoroughly enough…you’ve been warned :D**
