From the title itself, you know it’s a good morning. Another breakfast recipe in less than 5 days- aren’t you a lucky bunch! You actually have my buddy Maneka to thank! After our numerous discussions about how I eat the same 2 breakfasts repeatedly (peanut butter & banana oatmeal / yogurt messes), she challenged me to try eating something different every morning for one whole week! Naturally I accepted: I’m not one to turn down a challenge. There ain’t no room for wusses around here, no siree!
I’m on day 6 and thinking outside the box has been both mind-racking yet fun! Today’s breakfast would appeal to my fellow cookie dough lickers (why waste time with the baking ;)). Don’t tell me that I’m the only one who picks out all the bits of cookie dough from that tub of Ben & Jerry’s until only vanilla ice cream is remaining 😆
I was actually debating whether to post this because of my recurring recipe focus on peanut butter & oats. The last thing I’d want to do is bore you. But then again, who doesn’t like peanut butter and hence wouldn’t appreciate these recipes- now that’s just crazy talk!
I came across this recipe on Fitnessista.com and was immediately intrigued. The original recipe contains protein powder but you know that’s not my style. A few tweaks later and ta-daaa breakfast was served (well kept overnight in the fridge and then served).
Breakfast Cookie
Ingredients
- 30g Oats
- 8g Chia Seeds
- 30ml Milk
- 10g Peanut Butter
- Raisins
- Cinnamon
- 1 Heaped Tspn Applesauce
- Drizzle of Honey (optional)
Method:
- In a bowl, combine the above ingredients and mix well so that everyone gets well acquainted.
- Spoon the mixture onto a plate and flatten it out in the shape of a cookie.
- Place cling film tightly over it and refridgerate overnight to firm up
*If you want it slightly harder (that’s what she said 😉), put the cookie mixture in the freezer 10 minutes prior to eating.
- Un-cling film it, go wild with toppings and pretendyou’re santa because now you too have a legit reason to have cookies fo’ breakfast.
Toppings:
This is the fun bit- the choices are infinite so whatever floats your boat really. I did half banana slices and half greek yogurt with strawberries. Almonds+choc chips were also scattered on top. 😛
