Waffle iron hacks

There’s no way I can put up a post today without first wishing my sister the happiest of birthdays!  Aside from it being her #DirtyThirty, it’s Shyamla’s first birthday as a mom-to-be…exciting stuff!  No celebratory alcohol only means extra cake…Am I right or am I right ;)!

So let’s talk about irony for a second!  A few weeks ago I posted a recipe for my High-Protein Oatmeal Waffles

 I kid you not when I say that my waffle iron went kaput less than 24 hours later!  Although it meant not being able to temporarily eat waffles for breakfast, part of me felt relieved it went bust.  As we’d had it for over 20 years, I was glad to trade that clunky, bigger-than-it-needs-to-be piece of equipment for a much more compact & sleeker-looking waffle iron! 

I’ve gotten a bit experimental with my waffle iron over the past week!  I know many people are hesitant to buy a waffle iron out of uncertainty over how much it will be used, so maybe these waffle iron hacks will change that:

First up were Sweet Potato Hashbrowns:

As you can see from the bite taken, I was a bit too excited to see how they turned out.  After washing it clean, I merely grated the sweet potato, coated my waffle iron with cooking spray, and squeezed out the extra water from the potato shreds while the waffle iron heated up.  Then I distributed the sweet potato evenly and let the waffle iron work its magic.  While the sweet potatoes crisped up perfectly, it took longer than I expected, about 25-30 minutes.  Oh and for extra nutrients & less labor, leave the skin on!

Next up: A toastie.  Although the picture isn’t great, this Pizza Toastie tasted fabulous!

I merely spread marinara sauce across 2 slices of rye bread, added a tablespoon of grated cheese to each slice & oregano and sandwiched the two slices together.  Once the waffle iron heated up, I added the sandwich & watched it turn into a toastie within 3-4 minutes.

And finally my waffle iron also busted out an omelet….or shall we say a Wafflet ;)!

I coated the heated waffle iron with cooking spray, poured in the whisked eggs & my fluffy omelet wafflet was ready within 2-3 minutes!  No flipping, no breakage…WIN! My only advice is to not put in too much egg/batter.  Otherwise you can expect egg spillage all over your counter…I speak from experience!
