Salmon says – Khushbu Thadani

Salmon says

After ages I watched two of my all-time favorite movies this week: Home Alone 1 & 2 and both were just as amazing as I remember! Speaking of favorite movies, anyone remember the movie Clueless with Alicia Silverstone? I must have watched it over 20 times and can probably still recite the dialogue:

“You’re just a virgin who can’t drive”

There was one scene where Cher tries to cook for her ‘crush’ Christian and ends up burning the chicken:

“Oh honey, you baked”

Someone should’ve advised homegirl to cook up salmon instead.  It sounds a heck of a lot fancier than chicken yet requires minimal prep work.  After eating salmon for dinner this past week, I’m convinced it’s a guaranteed crowd pleaser…so convinced that if I had to choose a last meal on earth, salmon and sweet potatoes would probably be it:

Classic combination

I’d like to think that after 8 years of living in London, the adoration for ‘fish & chips’ rubbed off on me…just not in the traditional sense ;)!

The only advice I would give to Cher or anyone else cooking salmon at home is to bake it in foil.  It’s hassle-free and eliminates the risk of the fish releasing a stench.   Although I normally find salmon flavorful enough to bake au naturel, here’s the marinade I used for dinner this week…and one I will use in many future salmon meals to come, including my last 😉

Soy-maple marinade: (for one salmon fillet)
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • Salt & black pepper to taste
  1. Mix the above ingredients in a bowl
  2. Place salmon in a Ziploc, add in the above ingredients and shake it together.
  3. Leave the salmon to sit for at least 15 minutes in the refrigerator.
  4. Wrap the salmon in tin foil and bake in the oven for 10-12 minutes, or until it flakes easily

**Tip: If for any reason there is a lingering smell when you cook salmon at home, light a candle.**

What’s your ‘cheat’ meal: i.e. tastes good/looks fancy yet is simple to cook?
