Rather than my usual Brown Paper Bag Thursday post- I thought I would tell you about this killer sandwich I made last week. I’m going to call it a Synergistic Sandwich because the combo of ingredients was a partay in my mouth…so many different flavors & textures! Before I do, I want to talk a little about vegetarianism.
Up until recently I used to find it really hard to keep full on days I ate vegetarian meals because of the lack of pure protein from meat sources. However I’ve come to realise that the key with staying full as a veggie (not that I am one) is to rely on other crutches in addition to vegetarian sources of protein:
- fat;
- source of wholegrain carb/starch; and
- a boat load of vegetables
Take this sandwich: it’s a remix of the classic ‘cheese and tomato sandwich’ but any guesses which will keep you revved up for longer?
Synergistic Sandwich
What you will need:
- 2 slices of wholegrain bread, toasted (carb)
- Mustard
- Avocado (fat)–> Don’t even think about calling it the U-word
- Cheddar (protein/fat)–>the stronger the better
- Sprouts (protein)
- Lettuce & slices of cucumber/tomato (veggies)
1) Lather on the mustard & mashed avocado on both slices of bread

2) Top each piece of bread with lettuce. Place the cheddar on one slice of bread and the sprouts on the second slice.
3) Add your cucumber and tomatoes
4) Sandwich together
Check out the size of that monstrosity! Four hours people…it kept me full for 4 hours! I can’t recall any turkey sandwich out-filling me ;)!

I love veggie sandwiches. When you load them up like that, you don’t even miss the meat!
All of my favorite sandwich combos include avocado. It’s surprisingly the most versatile thing ever! And you just reminded me that I need to buy sprouts. 🙂

Ahhh avocado makes every sandwich a million times better; that looks delicious- and it’s true, that times I’m satisfied with a veggie meal is when it has a whole lot of heft! I also love portabello mushrooms or aubergine in veg sandwiches

Woo! Combination of epicness right there, I’ll have to try it. I have too many creations to say haha, one of my favourites with avocado though is avocado, egg whites and blackcurrent jam…I promise it ‘s nice!

This looks so good! Perfect for those unexpected “veggie” days in India. Another great sandwich combo I discovered this weeked bread spread with pesto and topped with cooked lentils and a cheese of your choice!
