One person’s birthday which I will ALWAYS remember is Michael Jackson’s.  Not only because he was a legend but also because it falls on the same day as my brother Anand’s: August 29th!  Happy birthday to the guy who…

HAPPY BIRTHDAY!!

In honor of Anand’s birthday (a fellow-cake lover, I might add), I wanted to share a recipe for an oat bran cake.  Up until recently, I had no idea what to do with oat bran.  After trying and loving it in the form of oatmeal, I tried it as a sub for oats in the next best thing: CAKE!  More specifically, citrus oat bran cake.  I’m tempted to say that this might be my best one yet: even my butter-lovin’ grandmother was a fan 🙂

Citrus Oat Bran Cake (10 generous slices)

Ingredients

  • 130g (1 cup) whole-wheat flour
  • 150g (1 cup) oat bran
  • 85g brown sugar
  • 35 ml honey
  • 1 1/2 tspn baking powder
  • 1/2 tspn baking soda
  • 1/4 tspn salt
  • 1/2 tspn ground cinnamon
  • 1 tspn grated orange zest (outer layer layer of orange)
  • 1 large egg, beaten
  • 2 tblspn groundnut (or canola) oil
  • 1/3 cup milk
  • 1 teaspoon vanilla essence
  • 50g raisins

Method

  1. Preheat the oven to 180*C and grease a loaf tin
  2. In a large bowl, combine the flour, oat bran, sugar, baking powder, baking soda, salt, ground cinnamon and orange zest
  3. In a separate bowl, whisk together the beaten egg, milk, oil, honey, and vanilla extract
  4. Add the wet ingredients to the dry ingredients and gently stir together until combined.  Stir in the raisins.
  5. Pour the batter into the loaf tin and bake for 20-25 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
  6. Remove from oven and allow to cool.
  7. Slice, eat, let me know how much you love it 🙂
