Bananas over baking

Considering I’m a blogger, it’s no surprise I like my words.  Give me an essay-based exam or a multiple choice exam, I’ll always choose the former.  Multiple choice questions come off as being easy but they leave no room for explanation- you’re either right or wrong…pretty harsh method of testing in my opinion! Anyhow that all being said, I do have a multiple choice question for you:

When life hands you overripe bananas, what do you do?
A) Freeze them for later use

B) Chuck them out

C) Turn them into baked goods

All 3 would work but naturally C is the best possible answer…naturally! :P.  More specifically, turn them into choc chip banana cookies. These, my friend, are a perfect example of synergy- individually each of these ingredients taste good but together, they create an end product which is in a league of its own.  The ‘ious’ doesn’t stop at delicious. These cookies are also nutritious and only filled with goodness.  Containing healthy fats, wholegrain carbs, protein, and fruit, these babies  leave no room for any  added gunk.

Choc Chip Banana Cookies

makes 20 cookies

  • 1/2 cup wholewheat flour
  • 1 cup quick-cooking oats
  • 50g honey
  • 1 mashed ripe banana (the blacker skin, the better)
  • 1 tablespoon ground flax meal
  • 1 tablespoon groundnut oil (sunflower/canola oil would work too)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Few drops of vanilla essence
  • 60 ml soy milk
  • 25g crushed walnuts
  • 60g semi-sweet chocolate chips
  • Pinch of salt

Preheat the oven to 150*C.  In a bowl, mix together all of the above ingredients.  Use your hands to flatten the dough into cookie-shapes.  Place onto a baking tray and bake in the oven for 10-12 minutes.  Enjoy with a glass of milk :)!
